Time is the invisible ‘ingredient’ in the food we make and cook. This idea is the starting point for food writer Jenny Linford’s new book, The Missing Ingredient, published in March 2018 to glowing reviews. Reviewing it for the Sunday Times, Bee Wilson called it ‘brilliant and original’. Structured in sections themed from seconds to years, the book takes the reader on a journey exploring time and food through a series of evocative, wide-ranging essays. Jenny will talk about her work researching the book, which included interviewing famous chefs such as Pierre Koffmann and Ken Hom and visits to farmhouse cheese makers, bakers, smokeries and a Danish chocolate factory.

One of the strands in The Missing Ingredient is the satisfaction of taking the right amount of time to cook food well through understanding ingredients and cooking processes. Christmas is a busy time of year for home cooks. Jenny will discuss the history of roasting food and feasting.and how sourcing good ingredients delivers flavour.

Following the talk, our lunch will riff on the theme of time and food to delicious effect.

Jenny Linford is a freelance food writer, a member of the Guild of Food Writers and author of fifteen books, ranging from cookery books to ingredient guides. Over the years she has written for a variety of publications, including The Guardian, Time Out’s Eating Out guides and The Times. Born in London, her interest in food stems from living as a child in Singapore and Italy, places where good food is important to the community, both taken for granted and relished as a great pleasure. She is an inveterate food shopper, always on the look-out for ingredients to cook with or delicious things to eat.
